The dough should be fairly hard. Cover it and let it rest, preferably in the fridge. Prepare the filling. Roll out a medium-sized sheet of pastry, cut circles as large as a coffee saucer and add a teaspoon of the filling. Fold each circle into a semicircle and push the edges so they close tightly.
